I know that each canton in Switzerland has their own social security office. Is it possible to switch to another office after retirement?

As a general rule, after retirement you remain registered at the social security office at which you are registered and make contributions in the time leading up to retirement.

There are a few exceptions. For example, a married person whose spouse already receives a pension will need to register and receive a pension from the same office as their spouse when they retire. If you move outside of Switzerland, you will need to register with the Swiss Compensation Office in Geneva which handles international social security payments.
