I signed a contract for a new job a few months back but have since been accepted for a much more lucrative position at another company. Can I just inform the first company that I am not interested in working for them anymore, or is there a process to follow?

If you have already signed an employment contract, you are bound by the conditions of that contract. You can terminate the contract, but only in keeping with the stipulated notice periods.
