Can I insure different members of my family at different insurance companies or do kids have to be insured by the same insurance as their parents?

Swiss compulsory health insurance policies are issued individually for each person, so you have the freedom to choose which policy you want to get for each member of your family individually.

Some insurers charge exceptionally low premiums for children's policies while other charge exceptionally low premiums for adult policies. So it can make financial sense to insure your children at a different insurance company than the one you are insured by.

Premiums are divided into three categories: children; young adults; adults. The premiums you pay depend on which age group you fall into. The exact ages of children do not affect premiums (they all pay the same children's premium). Gender does not play a role in determining compulsory health insurance premiums.

As long as your children live in the same place and you use the same insurance model and deductible for all of them, it is rarely worth insuring them at different health insurance companies. Many insurance companies offer family discounts for every child above a certain threshold (second child on up or third child on up, for example), and you lose this possible discount by using different insurers.
